Parmesan Crusted Fish Fillet
Wild Caught Red Snapper Fillet (≈500g)
1⁄2 tsp salt
1⁄4 tsp black pepper
1⁄4 cup mayonnaise
1 tsp lemon juice
2 cloves garlic, finely minced
1⁄4 cup panko bread crumbs
1⁄4 cup grated parmesan cheese
2 tbsps olive oil
- Preheat the oven to 350°F
- In a small bowl, mix mayonnaise, lemon juice and garlic. In a separate bowl, combine panko bread crumbs, parmesan cheese and olive oil.
- On a baking sheet, lay fish skin side down and season with salt and pepper. Brush on mayo mixture and then sprinkle with the parmesan & bread crumbs topping.
- Bake for about 20 minutes or until topping is toasted and golden brown and fish begins to flake. Enjoy!
